How to Make a Tasty Gingerbread

Hi all,

The Christmas period is over, but the winter is not. During these cold times (ok, it's not very cold right now) I have the habit to cook gingerbread. There is a lot of different recipes. The "real" one that we can find here in France doesn't contains eggs (?) but I don't really like it (it's too dry). A friend of mine gave me this recipe a few years ago. I really love it, as we've got a nice texture.

Follow these steps to discover how to make it !

Ingredients

Ok, for this gingerbread, you will need :

  • one egg
  • gingerbread spices (cinnamon + star anise powder + quatre épice) (one tablespoon)
  • confit orange zests (about 12 "sticks")
  • 140 grams of wholemeal flour (use regular flour if you don't have)
  • 100 grams of honey (liquid is better)
  • 25 grams of butter
  • 10 cl of milk
  • 50 grams of brown sugar (use regular sugar if you don't have)
  • one bag of backing powder (11 grams)

The "liquids"

In a pan, put 10 cl of milk, 100 grams of honey, 25 grams of butter and 50 grams of brown sugar.

Put the pan on the gas and start the heat. The idea is to melt everything slowly. Mix it while it melts. Don't let it boil ! It didn't take a lot of time.

The Other Ingredients

In a large bowl, put 140 grams of wholesale flour, one tablespoon of gingerbread spices and one bag (11 grams) of baking powder.

Cut the orange zests in small cubes and add them in the bowl.

Mix everything and make a hole in the center.

Mix the Two Preparations

Once the pan preparation is hot enough, slowly add it into the bowl. (Put the liquid in the center, then slowly mix the two preparations.) Keep adding the liquid and mix. You shouldn't have lumps.

Once you have a sweet mix, add one egg and mix again.

Prepare the Mold and Pour

As always, spread butter into a cake mold, then add a bit of flour. Shake the mold to put flour on every internal sides. With this, the cake will not stick in the mold.

Once done, pour the dough into the mold.

Baking

Put the mold into the oven, and bake for about 40 minutes at 170°C.

(Keep an eye on it...!)

To check if the cake is baked, insert a knife blade into it. If the blade comes out dry, the cake is ready. If there is still raw dough, put it again in the oven.

Finishing

Ok, once the cake is baked, take it out from the oven. Put a sheet on it and wait a couple of minutes before unmold-it. (It will be easier !!)

After a few minutes, unmold it and let is cool on a grid.

With an aluminum cover over it, you can keep this cake a few days.
