Making a Fish Risotto

You'll enjoy this meal. Great flavor and lot's of great ingredients. This rice risotto is delicious and creamy and I want you to try too!

Ingredients

To make the fish risotto you will need:

  • 50 grams of butter
  • 2 onions finely chopped
  • 20 grams of spring onion chopped
  • 1 teaspoon of garlic
  • 1 cup of frozen baby peas
  • 4 1/2 cups of fish stock
  • 1 1/2 cups of rinsed uncooked Arboriro rice
  • 400 grams of smoked salmon
  • 1 tablespoon of olive oil for the onions
  • salt and pepper to taste

Chop the Fish, Fry the Onions

Cut the fish into pieces then set aside. Cook the onions in a teaspoon of olive oil until translucent and lightly browned.

Adding Everything Together

If you are using a cast iron dish like I did it must be preheated for ten minutes before adding your ingredients.

Add the onion, uncooked rice, fish and fish stock into a casserole dish and mix it through.

Bake your risotto for 35-40 minutes at 180 degree C (360F). Once it is cooked take it out of the oven and immediately stir in your frozen peas then serve straight away.
