How to Make a Dank Coffee Cake
If the creamer in your coffee doesn't quite satisfy your morning sugar high: this will. Enter: the coffee cake, yet another excuse to cram more cake in your diet.

What you'll need
- 4-5 mixing bowls
- Baking pan/sheet
- cooking spray
- Spatula (preferably silicone but don't worry if it isn't)
The cake is made up of three parts: The streusel, the filling and the cake.
Ingredients:
Streusel
- 1 cup sugar
- 1/4 tsp salt
- 1 cup flour
- 1 tablespoon cinnamon
- 6 tablespoons of butter
- 1 brown sugar
- 1 1/2 tablespoon cinnamon
Filling:
- 1 cup brown sugar (packed)
- 1 1/2 tablespoons
- 1 teaspoon unsweetened cocoa powder
Cake
- 12 tablespoons butter (room temp., or lightly microwaved)
- 1 teaspoon salt
- 1 1/2 cup sugar
- 1/3 brown sugar (packed)
- 2 1/2 tsp baking powder
- 2 tsp vanilla extract
- 3 large eggs
- 3/4 cup sour cream OR plain yogurt
- 1 1/4 cup milk(skim, whole, etc.)
- 3 3/4 cup flour
Making the Streusel
- Pour the sugar, salt, flour and cinnamon in a mixing bowl and mix until well-combined
- melt butter in microwave covered for 20 seconds or until fully melted
- Pour butter into dry ingredient bowl and mix until mixture mirrors the *image
*mixture should contain clumps, but don't worry if it doesn't!
Making the Filling
- Mix brown sugar and cinnamon in a separate bowl. All done here, move on to the cake!
Additionally, you can add cocoa powder for added coloring!
Making the Cake
Mixing (Bowl one)
- Beat *butter, salt, sugars, baking powder and vanilla until ingredients are well combined (insert visual)
- Beat in eggs one at a time, beating between each egg
*To prevent an extended beating session, warm butter by letting it stand at room temperature, or by gently heating it in the microwave. This is so the butter is more pliable to beat; but be careful not to melt it!
Mixing (Bowl two)
- Whisk sour cream/plain yogurt and milk until well combined, lumps are allowed!
Combining
- Set aside 3 3/4 flour in a separate receptacle
- While beating, start combining both the flour, and the mixture in bowl two interchangeably
Assembling/Spreading
- With your greased baking pan, begin pouring the cake batter into the pan, reserving around *half of the batter for another layer
- After spraying your spatula with cooking spray, gently spread the batter out to the edges of the pan
*The layers don't need to be even!
- Sprinkle the filling evenly
- Pour remaining batter onto the filling. If needed, re-apply cooking spray to spatula. There will more than likely be parts of the filling that stick to the batter while spreading, this is ok!
- Sprinkle streusel evenly
Baking
- Bake for 55-60 minutes, or until sides of the pan are dark brown.
- Remove pan from oven using oven mitts
- Test the cake for any uncooked batter using a toothpick or a fork. If the toothpick/fork has any wet batter attached to it, the cake is not done baking.
- Cool for 20 minutes or more. Cover for future use.
