How to Make a Carrot Cake

This instructable will teach you how to make a delicious and moist carrot cake. Soon I will have another instructable on how to decorate the cake.

You will need

2 cups all-purpose flour

2 cups sugar

2 teaspoons ground cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

4 eggs

1 cups canola oil

2 cups grated carrots

1 cup well-drained crushed pineapple

1 cup chopped walnuts

Drain the Pineapple

Drain the pineapple, save 2 tablespoons of the juice.

Give the Carrots a Little Shave

Use a cheese grater to shred the carrots. You need 2 cups of carrots. This may take up to 5 good size carrots.

Mix

In a large bowl beat the carrots, eggs, walnuts, pineapple and the 2 tablespoons of juice until the mixture is well blended.

Combine the Dry Ingredients

In a smaller bowl mix together the flour, baking soda, cinnamon, and the salt.

Stir Everything Together

Mix the flower and carrot mixtures together until the mixture is thick.

Bake

Transfer into a greased 13-in. x 9-in baking dish. Bake at 350 F for 40 minuets. A good way to tell if the cake is done is to put a toothpick into the center of the cake and if it comes out clean it is done.
