How to Make Vanilla White Chocolate Chip Pudding Cookies
Ever had a pudding cookie before? If you haven’t, these Vanilla White Chocolate Chip Pudding Cookies are a treat! Now the pudding doesn’t make these cookies have pudding texture or flavor but it does make them incredible soft and they tasty like a cookie you would get from the bakery. I also used vanilla paste to add to the vanilla flavor, you can use vanilla extract, I just wanted the vanilla flavor to shine through. I love the amount of white chocolate chips in this recipe and I wish I would have added some chopped Macadamia nuts to them but if you do, I wont get mad. Supplies
Ingredients
- 1 cup unsalted butter, softened (229 g)
- ¼ cup granulated sugar (48 g)
- 3/4 cup light brown sugar, packed (151 g)
- 1 box (3.4 oz) Vanilla instant pudding mix
- 2 large eggs
- 1 teaspoon vanilla bean paste (7 g)
- 2 ¼ cups all-purpose flour (224 g)
- 1 teaspoon baking soda (4 g)
- ½ teaspoon salt (3 g)
- 2 cups white chocolate chip (reserve ¼ cup for topping) (360 g total 45 g reserved)
Cream Butter and Sugars
Preheat oven to 350 degrees F. Line two baking sheet with parchment paper. In a large mixing bowl cream butter, granulated sugar and brown sugar until creamy.
Add in Pudding Mix, Eggs and Vanilla Paste
Add in pudding mix, eggs and vanilla paste and mix until combined. Use a rubber spatula to scrape the edges and use the mixer to combined everything again.
Dry Ingredients
In a separate bowl add in flour, baking soda and salt and whisk to combined.
Add the Dry to the Wet
Add flour mixture to the butter mixture and combine slowly. I started using that rubber spatula to combine the dry to the wet and then combined everything using a hand mixer, you can use a standing mixer.
Add in Chocolate Chips
Fold in the1 ¾ cups of white chocolate chips.
Scoop Cookie Dough
Use a cookie scoop that is 1 ½ tablespoon, drop the cookies onto prepared baking sheet.
Bake
Bake for 12-14 minutes.
Top With Reserved White Chocolate Chips
Gently press in the reserved white chocolate chips onto cookies when they are still warm just out of the over and allow to fully cool on baking rack.
