How to Make Tot Chos (Bacon, Tater Tots, Gravy, Cheese)
A little over a year ago, I was introduced to these Tot Chos, and I was hooked from bite one! I have only seen them at this small chain of Burger joints in Arizona. I am sure there are other varieties out there. But this one, is so amazing, so incredibly tasty, you have to try it for yourself. I have no idea if you can get Tater Tots, outside the United States, but if not, I am sure you can find a suitable substitute...like French Fries maybe? haha

Ingredients:
Half bag of Tater Tots
3 Strips of bacon (I am using thick cut applewood smoked bacon)
1 cup of milk
2 Tbs of flour
1/2 cup of shredded cheddar cheese (of course you can use whatever cheese you like - I will allow it. ;-) )
2 or 3 Tbs of chopped green onions
Put Your Tater Tots in the Oven
First we will pre-heat our oven to 425 Degrees F. Or whatever it says on the back of your package. Then put those tots in the oven, and bake them on the center rack until golden brown - 20 to 25 minutes.
Cook the Bacon
Now we need to cook our bacon. I really like thick cut Applewood Smoked Bacon. I have tried all kinds of bacon, and I keep coming back to this flavor.
Remove Excess Bacon Grease
Now after the bacon is cooked. Set it aside. I usually put mine on paper towel. Next, we need to take out a little bit of grease. We only want about 2 Tbs of bacon grease for our Gravy. Of course if you want to make more gravy just leave all that yummy grease in there. The idea is to match the amount of grease with the amount of flour.
Add the Flour to the Bacon Grease
Now we turn down the heat to medium and add our flour to the bacon grease, do make our rue. Make sure to stir it all around.
Keep Stirring
Keep stirring that flour and grease until it looks like the picture.
Add Milk
Now we slowly add our milk and stir constantly. If lumps form, don't worry, we will get those out.
Use Fork to Get Out the Lumps
Next, I gently use a fork to get out the lumps. It does a great job, but use whatever you like to get the lumps out. If there are any.
Turn Heat Down Once Thick
Now we turn the heat down to medium low, once it gets thick and starts to bubble.
Add Salt and Pepper
Now add some salt and pepper. I don't add too much. Do it according to your taste.
Now the Gravy Is Done
The gravy is complete, if it is too thick, go ahead and add some more milk to it. Our tater tots are done as well, notice how they look. Nice and golden brown. Time to assemble our Tot Chos!
Cut Up Your Bacon
Now we cut up our bacon, into little pieces.
Add the Gravy
Put our tater tots on a plate, and pour the gravy over the top.
Add the Bacon, Cheese, and Green Onion
Next to complete the dish, we top it off with our cheese, bacon, and green onion.
Cost Break Down
This dish is pretty cheap to make. Costs will vary depending on where you by your ingredients, and how available they are. They are all easy to find here in the States.
