How to Make Strawberry Meringue Cookies

I will teach you how to make strawberry meringue cookies! They are super simple to make! If you are looking to make these just follow along and I will show you!

Supplies

  • Hand or Stand Mixer
  • 2 Baking Trays
  • 1 Piping Bag with a Star Attachment
  • Parchment Paper

Ingredients

For the cookies

  • 3 Large egg whites
  • 1 teaspoon of vanilla extract
  • 1/4 Teaspoon of cream of tartar
  • A dash of salt
  • 2/3 cup of sugar
  • Strawberry puree
  • 3 drops of food coloring

For the strawberry puree

  • 5 large strawberries cut up
  • 2 tablespoons of lemon juice
  • 4 tablespoons of sugar

Separate Your Egg Whites

Separate your egg yolks from your egg whites. Let the egg whites sit out for 20 minutes.

Line Your Baking Sheets and Preheat the Oven

Line 2 baking sheets of any size with parchment paper, this is so the cookies don't stick. Preheat your oven to 250 degrees Fahrenheit.

Make the Strawberry Puree

Add your chopped strawberries with the lemon juice and sugar to a sauce pan on medium heat. You strawberries can be frozen or fresh. Once the strawberries incorporate into the mixture let simmer for 2 minutes, then let cool. After it's cooled strain to get out any unnecessary strawberry pieces.

Making the Cookies

Into a large bowl add your egg whites, vanilla extract, cream of tartar, food coloring, and salt.

Whip Until Foamy

Whip the ingredients you just put in the bowl on high until foamy.

Add Sugar and Puree

Slowly add sugar and strawberry puree until stiff peaks this should take about 7 to 10 mins

Add You Meringue to Your Piping Bag

Add your meringue to your piping bag with whichever tip attachment you want. I like to use the star attachment because it gives it that classic meringue cookie look.

Pipe Your Cookies

Pipe your cookies in small circles that are about 1 to 1 ΒΌ inch in diameter.

Bake the Cookies

Bake in the pre-heated oven for 35 minutes. Once baked turn off the oven and let them cool and dry out for at least 2 hours or overnight for best results. Do not open the oven during this process.
