Gather All Ingredients and Oven to 350 Degrees
Gather all ingredients needed for batter and topping and set oven to 360 degrees.
Grease Muffin Pan
Grease muffin pan with non- stick vegetable oil. You might want to take a paper towel to spread around the outsides of the cups.
Combine Dry Ingredients
Combine 3 cups of flour, 1 tablespoon of pumpkin pie spice, 1 teaspoon of salt, and 2 teaspoons of baking soda. Mix with a wooden spoon and set aside.
Combine Wet Ingredients
Combine 1 15 oz can of pumpkin, 4 eggs, 2 1/2 cups of sugar, 1/2 cup of vegetable oil, and 1/2 cup of water. Combine with a hand mixer. Mix until batter is smooth and all ingredients are mixed together.
Slowly Add Dry Ingredients to Wet Ingredients
Slowly add the dry ingredient mixture to the wet ingredients. Mix with hand mixer until batter is smooth and fully mixed.
Scoop Mixture Into Muffin Cups
Using a ice cream scoop, take one scoop of batter and scoop it into each muffin cups. Make sure each muffin cup has a equal amount of batter. Set aside.
Gather Ingredients for Topping and Combine in a Bowl
Combine 1 cup of flour, 1/2 cup of brown sugar, 1/4 cup of sugar, 1 teaspoon of pumpkin pie spice and 1/2 cup of butter (softened.) Combine with a hand mixer. Mixture should be somewhat clumpy.
Sprinkle Topping Over Batter
Using a teaspoon sprinkle topping over batter. The amount is how ever much you prefer, but I would suggest fully covering the top of batter.
Place Muffins in Oven
Place muffins in the oven and cook for 22-25 minutes. Test with a toothpick and make sure it comes out clean before taking out of oven. The muffins should cook at 350 degrees.
Take Muffins Out of Oven When Fully Cooked
Take muffins out of oven when fully cooked. Let the muffins cool before eating or taking out of pan. After 10 minutes of cooling take muffins out of a pan with a fork. Then you can eat them.
