How to Make Pineapple Salmon

This is a dish that is a family favorite at my house. It’s a meal that is not super heavy, with a tremendous amount of flavor, and is paired well with risotto and a side salad. If you are looking for new ways to make salmon, this is a great recipe to just for that!
Supplies
• Sharp Knife
• Cutting Board
• Measuring Spoons
• 2 Cup Glass Measuring Cup
• Parchment Paper
• Cooking Spray
• 10” X 15” Rimmed Baking Sheet
Gather Ingredients

• 3 pounds whole salmon filet with skin
• Kosher Salt
• Pepper
• 1 15 ounce can of pineapple rings, in own juice
• 3 tablespoons melted butter
• 3 tablespoons sweet chili sauce
• 2 tablespoons fresh cilantro, chopped
• 1 heaping tablespoon garlic, minced (about 4 cloves)
• 2 teaspoons fresh ginger, minced
• 2 teaspoons sesame oil
• ½ teaspoon crushed red pepper flakes
Preheat the Oven to Approximately 350 Degrees.

Line the Baking Sheet With Parchment Paper and Lightly Spray With Cooking Spray.
Arrange the Pineapple in a Large Triangle the Length of the Pan.

Season Both Sides of the Salmon With Salt and Pepper and Place Skin Side Down on Top of the Pineapple.

Chop the Cilantro
Mince the Garlic and the Ginger
Melt the Butter in a Glass Measuring Cup

Whisk Together the Melted Butter, Chili Sauce, Cilantro, Garlic, Ginger, Sesame Oil and Red Pepper Flakes.

Spoon the Butter Mixture Over the Salmon and Sprinkle With the Sesame Seeds

Bake for 25 Minutes

Broil for 2 to 3 Minutes Until Slightly Caramelized
