How to Make My Favorite Nigerian "snack" in Just 7 Steps
For lunch today, I made my favorite Nigerian dish, dodo (fried plantain), and fried eggs. It is extremely simple and quick to prepare. I like to refer to this food as a snack because it is light and simple to prepare, but it can be eaten for breakfast, lunch, dinner, or as a snack.
Supplies
To make this "snack", all we need to use is plantain, eggs, salt, pan, flatware, plate, olive oil, and seasoning.
Ingredients
Here is what you'll need to make this Nigerian dish
Plate
Spoon
Knife
Oil (I used olive)
Eggs (I used 2)
Plantain (I used 2)
Seasoning (black pepper, tajin, salt)
Pan
Cut the Plantain
Prepare a plate, peel the plantain, and begin cutting it. You can cut them however you want, but I prefer mine in small cubes. Get your salt and add a little bit; plantain doesn't require a lot of salt, and you can even leave it out if you prefer. I like a little salt in almost everything I eat, which is why I only used a pinch here.
Prep the Pans
Begin by heating your oil in a pan of your choice. Turn on your cooker, place the pan on the stove, and wait for the oil to heat up. While you're waiting, get a small pan for the eggs, add a little oil, and set the pan aside until your plantain is ready.
Let's Start Frying
Once the oil has heated sufficiently, gently add your diced plantain to the hot oil and reduce the heat to low to avoid burning the plantain. After a few minutes, the plantain will turn a golden brown color, indicating that it is ready to be transferred to a plate. Some people prefer a brown color, but I prefer a golden color.
Prepare the Eggs
We can begin frying the eggs now that the plantain has been transferred to a plate. Get a small bowl, crack your eggs, and season to taste. I used Tajin, salt, and black pepper.
Fry the Eggs
Remember the small pan you set aside with a small amount of oil in it? This is the time to put it to use. Place the pan on the stove (low heat), wait for the oil to heat up slightly, and then gently transfer the egg into the pan.
Serving
Place the fried eggs on the same plate as the plantain and serve to yourself or whoever you made them for!
Remember to clean all of the utensils you used to prepare this tasty "snack."
