How to Make Juicy Chargrilled Lime Chicken

This Chargrilled Lime Chicken is the juiciest chicken I have ever eaten in my life! It’s so easy to make too. Simply dump the chicken in a bag with all the marinade ingredients, leave to marinate then grill. That’s literally it. Moist, tasty, incredible chicken. It's also naturally gluten free. Do I need to go on or shall we crack on with the recipe?

Here is what you will need to serve 3. (Easily doubled)

Marinade

  • 30ml Light Soy Sauce
  • 30ml Balsamic Vinegar
  • 1 tbsp Olive Oil
  • 1 tbsp Brown Sugar
  • 2 tsp Worcestershire Sauce
  • 2 tsp Honey Mustard
  • 2tsp Dried Thyme
  • 2 Garlic Cloves, crushed
  • Juice of 1 Small Lime
  • 3 Chicken Breasts
  • Cooked Rice or Couscous, to serve
  • Chopped Parsley, to serve (optional)

Essential Equipment

  • Large Zip Lock/Freezer Bag
  • Griddle Pan

The Marinade

Add all the ingredients for the marinade into the large zip lock bag and give it a good mix. I find it easiest to open the bag out in a bowl and fold the top over to keep it steady.

Flavouring the Chicken

Add the chicken to the bag.

Seal the bag then give it all a damn good mush around.

Leave to marinate in the fridge for 24-48 hours. At the very least, 3 hours.

Take the bag out the fridge when you’re ready to cook. Then, using a rolling pin, carefully bang the thickest parts of the chicken to flatten a little. This makes cooking easier and more even. Do be tactful though or you’ll pop the bag like I did & have to clean up raw chicken marinade juice from everywhere!

To Cook

Heat a griddle pan over a medium heat. When the pan is hot, add your chicken.

Want the pretty charred lines? Don’t touch them! Leave them exactly where they are for 5-8 minutes. (Depending on the size of your chicken breasts.)
Once the timer beeps, flip them over and repeat for another 5-8 minutes.

As soon as they’re cooked through, wrap them in a bit of tin foil and allow to rest for 5-10 minutes. This will help all those lovely juices stay inside the meat instead of pouring out.

Serve alongside some rice, couscous or even a salad. Enjoy!
