How to Make Ice-Cream

Today I am going to show you how to make four different ice-creams, Vanilla, Coffee, Chocolate Chip and Strawberry. These ice-creams are delicious, you really have to make them. Let me know in the comments below if you make them and what your favorite one was. My favorite one was the chocolate one :)

Ice-cream Base

To make the ice-cream you will need to make a base. For this you will need:

  • 500g Milk
  • 170g Sugar
  • 17g Plain Flour
  • A pinch of Salt

Mixing

To a bowl add the sugar, flour and salt and give it a good mix.

Scolding the Milk

To a pot add the milk and heat until it gets little bubbles on the bottom then turn the heat off.

Adding Dry Ingredients

Once you have scolded the milk add in the dry ingredients and give it a stir, then turn the heat back on and boil it until it has reduced down to 2 cups.

Thickening

Now if your not sure if you have boiled it down to 2 cups then just scoop out 2 cups and see if you have any left in the pot. I had been boiling it for around 6 minutes when I measured out the 2 cups and as you can see I still had some left that I needed to boil off, so I just tipped the two cups back into the pot and boiled it for another 2 minutes, then I had the 2 cups.

Whiping the Cream

For all the ice-creams you will need to whip the cream and icing sugar together. Just whip it until the beaters leave medium soft peaks.

Vanilla Ice-cream

To make the vanilla ice-cream you will need:

  • 1/2 Cup of ice-cream base
  • 1/2 Cup Cream
  • 1/2 Teaspoon vanilla essence
  • 1 teaspoon icing sugar

Mixing It All Together

Once you have whipped the cream and icing sugar, it is time to add the other ingredients. Add the ice-cream base and vanilla essence to the whipped cream and gently fold them together. To fold just cut down the center and then up and around over the top and keep repeating until it is all completely incorporated. Folding just keeps all the air in the mixture were as if you just mixed the ingredients in it would deflate the mixture and wouldn't be as airated. Once the ingredients are completely incorporated cover with cling film and leave in the fridge until cold.

Coffee Ice-cream

To make the Coffee ice-cream you will need:

  • 1/2 Cup ice-cream base
  • 1/2 Cup cream
  • 1 Tablespoon coffee essence*
  • 1 Teaspoon icing sugar

If you don't have coffee essence then you could make a strong coffee and use that instead.

Folding

Add the ice-cream base and coffee essence to the whipped cream and icing sugar and like we did before cut down the middle and then fold it over and keep going until it is all incorporated, then cover with cling film and leave in the fridge until completely cold.

Chocolate Chip Ice-cream

To make the Chocolate Chip ice-cream you will need:

  • 1/2 Cup ice-cream base
  • 1/2 Cup cream
  • 28g Chocolate
  • 1/2 Teaspoon vanilla essence
  • 1 Teaspoon icing sugar

Melting the Chocolate

To melt your chocolate you could use a microwave or a double boiler. To make a double boiler all you need is a pot and a heatproof bowl that fits on top. Boil some water in a jug and then pour in water to about an inch high. Then put the bowl on top making sure it doesn't touch the water. Now you can melt the chocolate.

Adding the Ingredients

Whip the cream and icing sugar like before and then add the ice-cream base, vanilla and chocolate. Now if you want little bits of chocolate all the way though the ice-cream like mine then leave the chocolate on top for 30 seconds or so and then fold it through. This will leave the chocolate on top mostly set but still soft enough to brake up and distribute through the ice-cream when folding. When mixed cover with cling film and leave in the fridge to chill.

Strawberry Ice-cream

To make the strawberry ice-cream you will need:

  • 1/2 Cup ice-cream base
  • 1/2 Cup cream
  • 6-8 medium sized Frozen Strawberry's
  • 1 Teaspoon icing sugar

Strawberrys!

The first thing that you will need to do for the strawberry ice-cream is make the strawberry puree. Puree the frozen strawberrys in a food processor or blender and then strain though a sieve if you don't want the seeds, and then let the mixture thaw.

Mixing

Whip the cream and icing sugar and then fold the ice-cream base and strawberry puree into the cream and keep folding until completely combined. Cover with cling film and put in the fridge until cold.

Lots of Ice-cream

Once all of the ice-creams are really cold it is time to start churning. Just add one into your ice-cream maker and churn until the consistency is like soft serve, then remove and put in a container and put in the freezer to firm up. Wash the ice-cream maker and then repeat with the other ice-creams.

Once the ice-creams have firmed up it is time to enjoy. You can eat them on there own but if you want to use it for something then you could make old fashioned ice-cream sandwiches. I will link to the recipe when I post it.
