How to Make Easy No Churn Mint Choc Chip Ice Cream

It’s hot. You need to cool down. I think you should try this ridiculously easy to make, no churn (yes, you heard me!) Mint Choc Chip Ice Cream! I’m not joking, you really don’t need an ice cream maker to make this crazy delicious & creamy ice cream. Shall we begin?

Here is what you will need to make approx 1 litre.

  • 470ml Double Cream
  • 1 397g Tin of Condensed Milk
  • 1 tsp Vanilla Extract
  • 1tsp Peppermint Extract
  • Green Food Colouring
  • 200g Milk Chocolate Chips

PLAN AHEAD: Put the cream and the condensed milk in the fridge the night before.

Making the Ice Cream

Firstly, in either a large bowl with a hand whisk or in an electric stand mixer with a whisk attachment, whisk the cream until at the stiff peaks stage. Be careful not to over whisk as it could become grainy. If it does, try adding a little milk and beating in with a spatula to bring it back.

Then in a large bowl, mix together the condensed milk and vanilla extract.

Carefully fold the whipped cream into the condensed milk in quarters. Keep going until it’s nice & smooth, being careful not to knock out all that lovely air you’ve put in.

Adding the Flavour & Colour

Next, add the peppermint extract and some green food colouring.

Carefully fold through until the colour is evenly distributed.

Adding the Chocolate Chips

Tip in the chocolate chips and give it a final (careful!) mix.

Scoop and Chill Out!

Pour the lot into an airtight container, seal the lid and freeze for 4-6 hours.

Allow to sit at room temperature for 5-10 minutes then scoop into cones or bowls and devour!

Mint Choc Chip Ice Cream has to be up there as one of my favourite flavours. So refreshing! Which is pretty much exactly what you want in Summer heat isn’t it? It’s so quick and easy to make, why not do another batch and you can invent your own flavours? Make the recipe up with the cream, condensed milk & vanilla extract then add whatever flavours take your fancy. The possibilities are endless!
