Combine all of your ingredients into a medium mixing bowl, and stir to combine using your hand to fully incorporate (DO NOT KNEAD) cover with plastic and let rise for 8-12 hours.

Once your dough has finished rising, remove the plastic. (The dough should have bubbles and a yeasty smell.) Then scrape down the bowl and turn the dough onto the table. Now clean your bowl out by sprinkling in a bit of flour, and wiping with your hand. Next oil and flour your bowl (rice flour is ideal, but all-purpose flour is fine too.

Shaping Your Dough

Stretch and fold to the center on all four sides (building tension in the dough.) Tuck and turn creating a smooth top (AKA the "gluten cloak.") Then place smooth side down in the bowl, and pinch together the top. Cover with plastic and allow to rise for 30-60 minutes before preheating the oven to 450 degrees Fahrenheit.

Baking Your Dough

After the dough has doubled carefully dump it into your PREHEATED dutch oven. Replace the lid and bake for 25 minutes with lid ON, plus 10 more minutes with lid OFF. The tops should be nice and dark so add more time if needed. ENJOY!!!
