How to Make Double Chocolate Cheesecake Muffins

I decided to enter this contest and make these muffins because I am trying to earn a little bit of extra money for my school science trip to Florida. I have fundraised a lot to go on this trip, and winning this contest would help just a little bit more. I chose this recipe because we already had all of the ingredients, and we needed to use up our cream cheese. I thought these muffins tasted delicious, and if you try it out for yourself, you will get to taste these delicious muffins.

Supplies

All of the ingredients are listed below:

Chocolate Muffin

  • 1/2 cup butter or margarine, at room temperature
  • 2/3 cup brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2/3 cup sour cream
  • 1 tsp ground cinnmon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2/3 cup milk
  • 1 cup mini chocolate chips

Cheesecake layer

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup sugar
  • 1 large egg

First, preheat your oven to 400ยบ F, and prepare 20 muffin cups with liners.

Then in a separate bowl whisk together flour, cocoa powder, salt, baking powder, baking soda and cinnamon. And then set it aside for now.

When your dry ingredients are set aside, beat brown sugar and butter/margarine together until creamy. Then add an egg, vanilla and sour cream. Beat until smooth. Then slowly add the bowl of dry ingredients and milk to the butter mixer, alternating between the two. Fold in chocolate chips and set it aside.


The Cheesecake Layer

Now take out your cream cheese and beat it until creamy. Add your sugar and beat until smooth. Then add an egg and beat it until fully incorporated. Make sure to not over mix. Make sure you scrape the sides of the bowl so that all of it gets mixed in.

Assemble

Place a spoonful of the chocolate batter into the bottom of each liner. Then add a layer of the cheesecake, but do not fill it to the top. Then at a small scoop of the remaining chocolate batter.

Sprinkle the tops of each muffin with some chocolate chips.

When the muffins are ready and assembled, bake them for 16-18 minutes until a tester comes out mostly clean.

Then remove them from the oven and let them sit for 5 minutes before removing to a wire rack to cool completely.
