Here is an awesome recipe for pork loin. The pork loin can be a drier cut of meat but it's typically an inexpensive cut as well. So with a little bit a preparation you can make the most delicious meal from this cut of pork. I like deep frying it with a coating so it stays moist and juicy. Also it's gluten free.

You friends and family will be asking you to make it all the time!

Prepare the Pork Loin:

Cut the pork loin into 1/4" slices, I like to get a pork loin with the fat cap intact but with the skin removed. I find freezing it for an hour or two helps firm it up to make slicing easier.

Next make the marinade:

In a large bowl add one cup of milk and egg, whisk to combine. Then add the dry spices and whisk: chilli flakes, garlic powder, onion powder, white pepper and salt. Add the pork and refrigerate for at least 30 minutes.

Heat a generous amount of oil with a high smoking point to 325F-350F, you can use a deep fryer but I like using a wok. Place some cornstarch in a bowl, this will be used to coat the pork slices before they go into the fryer. Coat each piece of pork one slice at a time in the cornstarch. Gently place each piece into the hot oil, make sure to drop the pieces of pork into the oil away from you, so if any oil splashes it won't hit you.

Fry for 2-3 minutes a side, once the pieces start floating and turning a golden color the pork is cooked. Place on a wire rack to drain or paper towel. Serve immediately or keep warm until ready to serve in a oven set at 250F.

They go really well with some french fries and I like to have them with BBQ sauce, a Thai chilli sauce or a nice hot sauce. Enjoy!
