How to Make Currant Cookies

Ingredients

To make the currant Cookies you will need:

  • 125g Butter
  • 1 1/2 Cups Flour
  • 1/4 Cup Sugar
  • 1/4 Dried Currants
  • 1 Teaspoon baking powder
  • 3 Tablespoons Coconut Jelly (Jam)
  • A few drops Vanilla Essence

Creaming the Butter and Sugar

Add the butter, sugar, coconut jam and vanilla to a bowl and mix until creamed and well combined.

Dry Ingredients

To the creamed mixture add the flour, baking powder and currants. Give it a good mix until it starts to clump together and then get in with your hands and bring the mixture to a ball.

Roll, Roll, Roll!

Line a baking tray with baking paper and then it is time to start rolling. Grab some mixture and put it in between your hands and start to gently roll it until it is a nice ball. Place the ball on the baking tray then use a fork and press down to make a nice looking cookie.

Baking and Enjoying

Bake in a 180 degrees C (356 degrees F) oven for 15-20 minutes or until lightly browned.

Then all you have to do is enjoy a delicious cookie.
