How to Make Crepes| Romanian Style Crepes | CLĂTITE

I often get asked to share Romanian recipes, so I thought I’d share a simple but delicious one with you. I will be making Romanian Crepes which are called Clatite in Romanian. They melt in your mouth and are light and airy. The list of ingredients is pretty basic and simple. I’ll also be showing you my favorite way to stuff my Clatites but honestly stuff them however you like, you can also make these savory but today we will be making them as a dessert. Supplies
Ingredients

- 2 large eggs
- 1 ¼ cup (300 g) milk
- 3 tablespoons (43 g) melted butter
- 1 cup (100 g) all-purpose flour
- 1 Tablespoon sugar
- Pinch of salt
- 2 Tablespoons (30 g) sparkling water, plus more if needed
- Extra melted butter for the pan
Melt Butter

Melt 3 tablespoons of butter. Set a nonstick 9.5-inch skillet on medium heat to heat up.
Add All Ingredients to Blender




To a blender add eggs, milk, melted butter, flour, sugar, salt and sparkling water. You can use and hand mixer but I find that it make a mess and you tend to get lumps so I personally prefer a blender.
Blend


Blend until batter is smooth. Add more water if needed. Check my video to see the right consistency of the batter.
Cook Crepes



Brush the pan with melted butter and immediately pour enough batter into the pan to very thinly coat the bottom and reach the sides. You may need to swirl the pan a bit to move the batter around, but it should spread easily. Use the first crepe as a guild/test and add extra salt and sugar if needed or thin out the batter if you like it thinner.
Flip and Repeat



Cook the crepes until the edges begin to crisp and curl and the bottom is golden, 1-2 minutes. Using a spatula, flip the crepes over and cook the other side until just golden about 1 minute. Placed cooked crepes onto a flat plate.
Repeat until batter is finished.
Stuff Crepes




Add your favorite stuffing onto the crepes. I like to add sour cream and sugar and then roll them up! My mom taught me this and it is my favorite way to eat these Romanian Crepes
