How to Make Cranberry Glazed Chicken Breast

This cranberry-glazed chicken dish is a family favorite and so easy. It's just 5 ingredients (not including salt and pepper). The trick to this dish is to sauté the chicken breasts and then deglaze the pan with the cranberry mixture. Here’s another tip: if you have leftovers, put the chicken in a corn or flour tortilla (or a lettuce leaf if you really want to keep it healthy) and pack it for a nutritious lunch.

Ingredients

4 chicken breasts, boneless, skinless

¾ cup whole cranberry sauce

¼ cup apricot jam

1 Tbsp. Dijon mustard

2 tsp. fresh lemon juice

Preparing the Chicken

Wash chicken breasts and pat dry with paper towel.Pound chicken breast so they consistently ½ inch thick

Cooking the Chicken

Season with salt and pepper. Using medium-high heat,coat skillet with cooking spray and add olive oil.Add seasoned chicken and brown until cooked through (about 5 minutes each side). Transfer chicken to a plate and cover.

Preparing the Glaze

Combine cranberry sauce, apricot jam and mustard and lemon juice in a bowl.

Cooking the Sauce

Add cranberry mixture to the empty skillet and stir until thickened (about 3-4 minutes).

Drizzle the Sauce Over the Chicken.
