How to Make Cowboy Pot Roast

Cowboy Pot Roast

In this instructable, I will show you how to make Cowboy Pot Roast with your slow cooker.

Ingredients

For this recipe, you will need,

1 tsp pepper & an extra 1/2 tsp pepper

1 tsp salt & an extra 1/2 tsp salt

1 tbsp chilli powder

1 10 oz can of rotel

2.5-3.5 lb chuck roast

2 tbsp vegetable oil

1 can of chili beans, drained

1 onion cut into 8 wedges

1 can of black beans drained and rinsed

1 14.5 can petite diced tomatoes, drained

Mix It Up

In a large bowl, mix together the onions, 1 tsp pepper, 1 tsp salt, chili powder,tomatoes and rotel.

Dash of the Salt and Pepper Makes Everything Better

Using the remaining 1/2 tsp of salt and pepper, season both sides of the roast.

Sizzlin' Before Slowing It Down

Heat the oil on medium heat in a skillet and brown both sides of the roast.

Now Time to Slow It Down

Add the roast to the slow cooker and top with the tomato mixture.

Cook on high for 5-6 hours until the meat is tender.

Cuttin It Up'

Remove the roast from the slow cooker and cut into big pieces.

Now Time to Add the Other Stuff.

Mash 1/2 of the chili beans using a fork and add them to the slow cooker and stir in.

More Stuff in the Slow Cooker

Now add the black beans and the rest of the chili beans and stir in.

All In!

Add the roast pieces back into the slow cooker and stir.

Cover and cook for an additional 20 minutes.

Serve over rice and if you want an additional spicy kick, top with sliced jalapeƱos.
