How to Make Coconut Ice
Today I am going to show you how to make coconut ice. It is really nice, you are sure to enjoy it!
Soaking
The night before you want to make the coconut ice, mix a 1/4 cup cream and a 1/4 cup coconut together and leave in the fridge over night covered with cling film.
Mixing Together
To make the coconut ice you will need:
- 1 cup sugar
- 1/4 cup milk
- 1/2 pinch cream tarter
And the soaked coconut and cream mixture
Add all of your ingredients to a pot and put on the stove.
Boiling
Bring your mixture to a boil then let it boil until it reaches 113 degrees C or 235 degrees F stirring occasionally, if you don't have a candy thermometer it takes 6 minutes boiling to reach 113 C or 235 F. Once it has reached the right temperature pour into a heat proof bowl and leave to cool.
Now I just left mine white but if you wanted pink as well just split the mixture into two bowls instead of one and in one of the bowls add a bit of pink food coloring until the desired consistency.
Put in Fridge
Once your coconut ice is cool tip it out onto some cling film and roll it up into a log and put in the fridge to harden up.
If you are making half the mixture pink and half white, line a little loaf tin or something rectangle with some cling film and pour in the white coconut ice and then put the pink on top. Fold the cling film that is up the sides down to cover the top. And then put in the fridge to harden up.
Ready to Eat
Now that your coconut ice has harden up you can sit down and enjoy!
An alternative idea is if you don't just want to eat it all (and I am sure you will), you can also roll bite sized bits of the mixture into balls and dip them in chocolate, leave them to set and you have a little chocolate decoration or some truffles.
