How to Make Cinnamon Pancakes

There's something comforting about the smell of cinnamon in the morning. This cinnamon pancake recipe is one I love for its simplicity and wonderful flavor. It's perfect for a relaxed weekend breakfast or any day you want to treat yourself. These pancakes are fluffy, lightly spiced, and easy to make with ingredients you might already have at home. Follow these step-by-step instructions to bring a little warmth to your morning routine.
Supplies
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup milk
- 1 egg
- 2 tablespoons melted butter or cooking oil (plus extra for the pan)
- 1 teaspoon vanilla extract
Tools & Equipment:
- 2 mixing bowls
- Measuring cups and spoons
- Whisk or spoon (for mixing)
- Non-stick frying pan or griddle
- Spatula
- Stove or electric griddle
- Ladle or 1/4 cup measuring cup (for pouring batter)
- Plate (for stacking finished pancakes)
Mix the Dry Ingredients:
In a large bowl, combine the flour, sugar, baking powder, ground cinnamon, and salt. Mix Well.
Mix the Wet Ingredients
In a separate bowl, mix together the milk, egg, melted butter (or oil), and vanilla extract.
Combine

Pour the wet mixture into the dry ingredients. Stir until just combined-- do not overmix. The batter may be slightly lumpy.
Preheat the Pan
Heat a non-stick frying pan or griddle over medium heat. Lightly grease it with butter or oil.
Cook the Pancakes

Pour 1/4 cup of batter onto the heated surface for each pancake. Cook until small bubbles form on the surface the edges look set, about 2-3 minutes. Flip and cook the other side for 1-2 minutes, or until golden brown.
Serve & Enjoy!
Remove from heat and serve warm. Great with maple syrup, sliced bananas, or a sprinkle of extra cinnamon.
