How to Make Chicken Saltimbocca

In this instructable, I will show you how to make Chicken Saltimbocca.

Ingredients

For this recipe, you will need:

2 chicken breast

8 thin slices of proscuitto

1/3 c chicken broth

1/2 tsp corn starch

1 tbsp and 1 tsp olive oil, divided

1 tsp sage

1/8 tsp salt

1 lemon

Make the Most of That Chicken Breast

Pound the chicken breast until even and thin and then cut in half.

Tis the Season

Season each breast with the sage and spread evenly.

Double the Meat!

Wrap each breast with two pieces of prosciutto.

Fry It Up!

Heat 1 tbsp of olive oil in a large skillet on medium heat and cook each side of the chicken for four minutes.

Grab a Medium Bowl

Juice the lemon and mix the juice together with the chicken broth and cornstarch.

Make Room in the Skillet

Remove the chicken from the skillet.

Skillet Round 2

Add the other tsp of olive oil into the skillet and then pour the juice mixture into the skillet and cook until it thickens while scraping the bottom of the pan to get the pan scrapings mixed in too.

Spoon the sauce over the chicken and serve.
