How to Make Chicken Milanese and Spaghetti Aglio E Olio With a Side of Caprese Salad

Hi! I'm Ella, and today I'm going to be showing you how to make a delicious dinner of chicken Milanese with sides of Spaghetti Aglio e Olio and Caprese salad.

Supplies

For all three dishes, you will need oil, salt and pepper, flour, chicken breasts, of butter, eggs, grated parmesan cheese, spaghetti noodles, crushed red pepper flakes, garlic cloves, Roma tomatoes, fresh basil leaves, and mozzarella cheese. I will list the specific amounts of each as I go.

Gather the Ingredients for Chicken Milanese

For chicken Milanese, you will need...


  1. 3 chicken breasts
  2. Your desired amount of salt and pepper
  3. 1 cup of flour
  4. 2 large eggs
  5. 1/2 cup of bread crumbs
  6. 1 cup of panko bread crumbs (You can also just use regular bread crumbs)
  7. 1/2 cup of grated parmesan cheese
  8. About 1 tablespoon of oil
  9. 2 tablespoons of unsalted butter.

Season the Chicken Breasts

Now that you have your ingredients, it's time to season the chicken breasts. Sprinkle the desired amount of salt and pepper onto your chicken breasts.

Create the Breading Mixtures

The next step is to create the breading. In one bowl, add the flour. In another bowl, whisk the eggs, and in the third bowl, add the parmesan cheese, panko, and bread crumbs. I just used regular bread crumbs instead of panko.

Coat the Chicken Breasts

To coat the chicken breasts, begin with tossing them in the flour. Then, dip them in the eggs. Finally, dip them in the bread crumb/parmesan mixture and press it into the chicken until it sticks. Remember to shake off the excess ingredients as you go.

Prep the Pan

Place a pan or skillet over medium heat. Add the oil and melt the butter inside the pan.

Cook the Chicken Breasts

Put your chicken into the pan. Let it cook for 10-15 minutes or until it's golden brown, still on medium heat. You can put a thermometer through the middle of the chicken, and it should read 165°. Put the chicken on a plate lined with a paper towel.

Gather the Ingredients for Spaghetti Aglio E Olio

For Spaghetti Aglio e Olio, you will need...


  1. 1/2 a box of spaghetti noodles
  2. Oil
  3. Desired number of garlic cloves
  4. Desired amount of crushed red pepper flakes
  5. Grated parmesan cheese
  6. Salt and pepper


Boil the Noodles

Break the noodles in half and put them in a pot of generously salted water. Bring the noodles to a boil and cook until nearly al dente (or almost done.)

Sauté the Garlic Sauce

While the noodles cook, pour some oil into another pan over medium heat. Add your desired number of garlic cloves and crushed red pepper flakes. I did 1/2 tsp of red pepper flakes. Mash and chop up the garlic with a fork. Let it sauté for 3-5 minutes, or until lightly golden. This will be your garlic sauce.

Mix Noodles and Garlic Sauce

When both the noodles and garlic sauce are done, pour the noodles and about 1/2 cup of the starchy noodle water into the garlic pan. Toss it until the majority of the sauce is absorbed by the noodles.

Gather the Ingredients for Caprese Salad

For Caprese salad, you will need...


  1. Mozzarella cheese (I got the pre-sliced kind, but a block of mozzarella is fine too)
  2. 2-3 Roma tomatoes
  3. Fresh basil leaves
  4. Balsamic glaze

Slice Roma Tomatoes

Slice the Roma tomatoes into medium thick slices.

Layer Tomatoes and Cheese

Layer the tomatoes and cheese, alternating between tomato slices and mozzarella.

Chop the Basil

Finely chop your desired amount of basil. Sprinkle the pieces over the tomatoes and mozzarella.

Drizzle the Balsamic Glaze

Drizzle the Balsamic glaze onto the Caprese salad.

Add Additional Garnishes (optional)

Arrange the meal on your plate and sprinkle parmesan cheese and parsley over the meal.

Admire the Finished Product!
