How to Make Calzones
In this latest video I show you my process for making Calzones below is my simple recipe for pizza dough to get you started and you can fill them with whatever you want. Ingredients for Dough
Pizza Dough
- 6 Cups Flour
- 3 tsp yeast or one packet
- 1/4 cups water
- 1 tsp sugar
- 2 cups warm water
- 2 1/2 tsp salt
- 1/4 cup sugar
- 1/3 cup olive oil
Directions for Dough
Directions
Mix together 1/4 cup of warm water with 1 tsp sugar and sprinkle with yeast. Let the mixture sit until it starts to ferment (about 5 minutes). Next whisk together 1 cups water with, salt, sugar, and oil. Add this to the yeast mixture along with 1 cup of flour and whisk until smooth. Slowly add the rest of the flour while mixing with a wooden spoons or mixer with a dough hook attachment, (Note: When mixing with a wooden spoon stir until the dough starts coming away from the sides of the bowl and a ball starts to form. Switch to your hands and knead the dough while adding the rest of the flour). It's best to move the dough to a floured surface. The dough is ready when is smooth and elastic. Let it proof in a greased bowl with a damp towel over it for 45-60 minutes then its ready to use.
Prep Your Fillings
For this demonstration I just sliced some peppers, mushrooms, onions and added mozzarella cheese. I also used pizza sauce but use your imagination and make whatever kind you want.
Roll the Dough
Pinch off a piece of dough about a little bigger than a golf ball and press it down on a floured surface. Pat it down a bit, grab your floured rolling pin and roll it out as thin as you can get it. The calzone will be as thin as a tortilla.
Spread Sauce
Spread out a heaping tablespoon of sauce on one half of the calzone but be sure to leave enough space to fold to over and about a 1/2 inch from the edge so you can seal it.
Place "Toppings" on the Sauce
Place all your desired ingredients on the side with the sauce, don't over fill because it will be hard to fold. Make sure you also still leave the 1/2 inch on the sides for sealing. Here you can use whatever sauces or fillings you would like. I'm a huge fan of pulled pork and peppers for an alternative.
Wet the Edges
Dip your finger in a bowl of water and use it to lightly wet the edges of the calzones. This will help seal it much better.
Fold and Fold
Fold the side of the calzone with nothing on it over the side with all the ingredients so that the sides touch creating a half moon shape. press down on the edges and push in any veggies that try to escape. Next start from one end and roll up the edges creating the seal. See video for extra help.
Score and Brush With Egg Wash
Lay all of your calzones on a parchment lined baking sheet and score them with a knife. You can uses different numbers of marks to determine whats inside if you have different calzones. In a little bowl whisk together one egg and a tablespoon of water with a fork. Take a brush and brush each calzone on top with the egg mixture.
Bake
Bake in a oven heated to 425 degrees for 15-20 minutes or until golden brown. Serve them up with whatever kind of dip or side you like. Don't forget to please subscribe to my channel for more great recipes and help me change my life one recipe at a time.
