Discover your creative side while indulging your sweet tooth with these wonderful cakescicles. You can use your favorite cake recipe to make these. You can even make these with leftover cake! For the purpose of this instructable, I made my cake with a boxed cake mix. So, you can also use any boxed cake mix and follow the instructions on the box then proceed to assemble your cakescicle when you cake comes out of the oven. For these cakescicles I used:

1 box of vanilla cake mix - my cake mix called for 3 eggs, 1/3 cup of vegetable oil and 1.5 cups of water.

1 small tub of cake frosting

colored candy melts

craft sticks

silicone popscicle mold

Let's get making.

Prepare Your Cake.

If you're using a boxed cake mix, it usually comes with the baking instructions and other ingredients printed on the box. Mine called for 3 eggs, 1/3 cup of vegetable oil and 1.5 cups of water. I put all the ingredients together in a mixing bowl and stirred everything with a wooden spoon. You can also use a cake mixer to stir your ingredients but I like using a wooden spoon so as not to overbeat the mixture. When your mixture is free of lumps, you can pour it into a greased baking pan or a cupcake pan. I made cupcakes because it makes it easier later to make the cakescicles to use individual cupcakes rather than a whole cake. I baked the cupcakes in the oven for 18 minutes at 350 degrees. When they come out, test them for doneness by poking one with a toothpick. If the toothpick comes out clean, your cupcake is ready.

Fill Your Popscicle Mold With Melted Candy Melts

While waiting for your cupcake to bake, take a few candy melts. I used the white candy melts as I'm using them as the color of my base. Pour 1 teaspoon of vegetable oil on the candy melts and melt them in the microwave for 30 seconds. After 30 seconds, take the candy melts out of the microwave and stir the mixture of candy melts and oil. If the mixture is still thick and lumpy, put it back in the microwave and heat for 10 seconds. Keep Heating and stirring at 10 second intervals until the mixture is smooth. Once the mixture is smooth, pour it into the popscicle mold and spread it evenly on the sides of each mold. Chill the coated popscicle mold in the fridge. This will be the front of your cakescicle.

Assemble Your Cakescicle.

Take 3-6 cupcakes and add 1-2 tablespoons of cake frosting to it in a mixing bowl. Stir the mixture until the cake is moist enough to stick together. When this mixture is ready, take out your coated popscicle mold from the fridge. Check that the candy melt coating is hard. Take a portion of this cake+frosting mixture and place it into the popscicle mold. After filling the popscicle mold with cake, slide the popscicle sticks into the stick holes on each of the popcicles. Now cover the cake with more melted candy melts. Return the filled popscicle molds in the fridge to chill and harden the rest of the candy melts.

Decorate Your Cakescicle.

After 30 minutes in the fridge, your cakescicle will be set and ready for decorating. Slip the cakescicles out of your popscicle mold by lifting the top section of the cakescicle and slide the rest of the cake out. Now, take a few pieces of your colored candy melts and add a teaspoon of vegetable oil to it and melt them together in the microwave for 30 seconds. If it comes out and is not smooth enough, return it to the microwave at 10 second increments until its smooth. Use a fork to drizzle the colored candy melts to your cakescicle. Add colored sprinkles while the drizzled candy melts is still wet. Chill everything in the fridge to set then enjoy!
