How to Make Bacon and Gruyere Egg Bites | My Version of Starbucks Sous Vide Egg Bites
Today I want to show you my version of the Bacon and Gruyere Starbucks sous vide Egg Bites. Now they are not going to be exactly the same because I will be baking these in my oven and Starbucks makes them using a sous vide machine which can cost around one hundred dollar and lets be real, do we need an extra kitchen gadget that collects dust on our kitchen? My kitchen is too small for that and I don't like having gadgets that I hardly ever use taking up space. Sous vide is a French term that means you are cooking something in a "vacuum" under water for a longer period of time. The Starbucks egg bites have the perfect texture and I can't say that mine were completely the same but if you want to save some money and a few trips to Starbucks make these instead. Ingredients
- 10 eggs
- ½ cup of shredded Gruyere cheese
- ½ cup of shredded Monterey Jack cheese
- ½ cup cottage cheese
- ½ teaspoon salt
- Fresh black pepper
- 4 slices of applewood-smoked bacon
- Hot Sauce (optional)
- Non-stick spray
- Cooking Converter (if you need help converting the measurements)
Preheat Oven and Prepare Bacon
Preheat oven to 375 degrees F. Slice the bacon into thirds and place them on a cooking sheet that has been lined with aluminum foil. You only need four whole slices of bacon, so once cut, you should have 12 small slices of bacon.
Bake Bacon
You can cook your bacon however you prefer, I like baking it because I avoid the mess and the smell of bacon. Bake the slices of bacon for 15-20 minutes in preheated oven or until crispy. Place cooked bacon on a plate that has been lined with paper towels and lay them flat. I like the blot the tops of the bacon with a paper towel to get any extra grease off.
Prepare Oven and Muffin Tin
Preheat oven to 300 degrees F and place a deep-dish baking dish that has 1 inch of hot water in it on the bottom rack of the oven. This helps the eggs cook evenly and keeps them moist. Spray muffin tin with non-stick spray.
Add Eggs and Cheeses to Blender
Add the eggs, shredded gruyere cheese, shredded Monterey Jack cheese, cottage cheese, salt, and pepper (and hot sauce) to a blender (make sure you use a full size blender).
Blend
Blend until light and frothy. Make sure you are using a large blender not like the one I have here because I wasn't able to blend the egg mixture properly. Also transfer the egg mixture to a larger pitcher with a spout so you can easily pour the egg mixture into the muffin tins and avoid a huge mess.
Fill Muffin Tins
Fill muffin tins almost all the way to the top with the egg mixture. Divide the bacon equally among all of the muffin tins. I did this step backwards because I added the bacon to the muffin tins first. You can chop the bacon so you have bacon bites or keep them whole like I did.
Bake the Egg Bites
Bake in the oven for 25-30 minutes, or until the center of the egg bites are just set.
Remove Egg Bites
Allow to cool for 5 minutes, then carefully remove them from the muffin tin by running a knife along the sides and use a fork to get them out.
Enjoy!
Serve warm and enjoy! Mine were a bit different than Starbucks because the texture wasn't the same and I forgot to add hot sauce but they are tasty and perfect for breakfast.
