How to Make Raw Pecan Milk

The recent "Raw Food Recipe Contest"  inspired me to make Raw Pecan Milk.  We have a live pecan tree growing in our yard and every year we yield a very good crop.  It is a time consuming process to shell all the pecans.  The challenge to come up with a recipe has been an educational experience.  I did not know that some raw nuts have been banned in the USA.  This knowledge has made me more appreciative of growing  our own pecan tree. I have not made a thorough search on this so I don't know how much truth there is to it.  It would not surprise me though.   

Recipe

This is what you need:
  • 1 Cup raw shelled pecans.
  • 3 Cup filtered water or spring water.
  • Sweeten with Agave Nectar.
I served the milk in a small bowl of mixed berries and pecan milk.  
If the milk is too weak add more pecans.  
If it is too thick add more water.

Utensils

What you will need:
  • 1 Blender 
  • 1 Drinking glass or wine glass
  • Mesh strainer
  • Bowl
  • Measuring cup
  • Measuring spoon 
  • Container with lid to store pecan milk in
  • Another container with a lid to store the pecan pulp in.
  • Spoon

Wash the Pecans

Method:
Wash the whole pecans in the strainer with hot soapy water.

I don't know for sure if my method is correct but this is how I clean  them.  

Shell the Pecans

Method: 
  • Shell 1 cup of pecans. 
  • Place the pecans in the strainer.
  • Rinse well with cold water.
  • Place in a dish and cover with water.
  • Replace the lid.

Soak Over Night

Method:
  • Store covered in the refrigerator for 4 - 8 hours.

Blend Together

Method:
  • Empty the pecans into the strainer.
  • Rinse well with cold water. 
  • Let it set and drain.
  • Place the pecans in the blender.
  • Add water.
  • Add sweetener.
  • Blend for 1 minute.

Strain

Method:
  • Place the strainer in a bowl.
  • Pour the milk into the strainer.
  • With the spoon work the milk so it will freely drip.
  • Remove the strainer and pour the pecan pulp contents into a covered bowl.
  • Refrigerate.
  • Pour milk into a covered container.
  • Refrigerate.

Pecans are very nutritious containing vitamin A,B,E, folic acid, calcium, magnesium, phosphorus, potassium, and zink.
Pecans may reduce cholesterol and has beneficial ingredients that have been known to help neurological diseases. It may decrease the risk of cancer and coronary heart disease. We all liked the pecan milk and will be making it on a regular basis.
