Hot Mackerel Lunch
Today I cooked up my favorite lunch and decided to show you how to make it. I love the mackerel flavor with this meal however you can also interchange it with salmon, bacon or some other meat.
Ingredients
For a lunch for two you will need:
- 4 slices of bread (I used Sourdough Bread)
- 425 grams of canned mackerel
- a few slices of cheese
- butter
- 1 onion
- garlic
- optional extra's are tomato sauce, preserved chili's and sun-dried tomato's.
Fried Bread
Spread all four slices of bread with butter and cook on you frying pan butter side down. Then quickly get your garlic and spread it on the top of your bread. Slice up some cheese and lay it on top of the garlic side of bread.
Melted Cheese
Remember to check the base of your bread so that is doesn't over cook. When it's crispy take it off the heat and put two pieces of bread on each plate. The cheese will have heated up and melted through the garlic into the bread.
Onions
For the onions you will need:
- Olive oil
- Italian herbs
Cut up your onion into slices and put them on your frying pan. Add a dash of olive oil as well as a sprinkle of Italian herbs to the mix. Stir it around and fry them up until the onions become translucent. Separate into two portions and scoop them on top of your bread.
Mackerel!!!
Pour your tin of mackerel into a bowl and use a fork to mash it up. Then tip it into your frying pan to heat up. I had a lot of fish oil in my can so I left it cooking for a while until the oil reduced down.
Now it's time to scoop the fish on top of the onions.
Sun-dried Tomato's and Chilies.
Select some chili and tomato to your taste and chop them up. I have only used a few toppings here but feel free to lavish them on. Tomato sauce is optional for this meal.
Finished and Ready to Eat
With a crispy base and a full tasting mackerel flavor, whether for lunch or dinner this is a great meal for two people.
