Homemade "healthy" Strawberry Cheesecake!
Who doesn’t love a good strawberry cheesecake? And especially when some small, unnoticeable changes are made to make it healthier, nobody can say deny this amazing cake. Enjoy!
Ingredients:
- 100g of oats
- 100g of nuts of your choice (for example pecans, walnuts, almonds, or peanuts)
- 3 tbsp of honey, maple syrup or agave nectar
- 50g of coconut oil 300g of cream cheese
- 300g of mascarpone
- 300g of double cream
- 100g of sugar
- ½ tbsp of vanilla extract
- 1 zested lemon
- 400g of washed and hulled strawberries
- 1 tbsp of sugar
Put the honey/maple syrup/agave nectar, oats, coconut oil and nuts in a pan on lower fire. If the nuts are too big, blitz them into smaller chunks with a food processor. Mix them together until everything is combined well.
Put the mixture of oats, nuts, and honey in the with-baking-paper-covered cake tin and flatten it to create the base. Then, put it in the fridge to cool down.
Using a stand mixer with paddle attachment, beat together the cream cheese, mascarpone, and sugar until it’s light and fluffy.
In a separate bowl, mix together the double cream, lemon zest, and vanilla extract.
Carefully, mix the two together. Make sure not to overdo it, otherwise it won't be light and fluffy like desired.
Spread the cheese and cream mixture evenly over the base, and let all of this set in the fridge for at least 4 hours, though preferably overnight.
Cut the strawberries either in four pieces or in slices, and use them to decorate the top.
