Ingredients and Tools
Ingredients:
- 1/2 cup plus 3 Tbsp of softened butter (154g)
- 1/2 cup of white granulated sugar (100g)
- 2 cups all-purpose or cake flour (240g)
- 11 to 12 oz caramel, I use kraft brand or use homemade (311g)
- 2 Tbsp of cream
- 1/2 tsp salt (2g)
- 16 to 24 oz of chocolate, Candiquik, candy melts, semi-sweet, dark, milk, white chocolate chips, chocolate bars, etc. (454g, Doesn't have to be exact)
Tools:
- Food processor (optional)
- Bowls
- Spatula
- Spoon
- Cooking spray
- Aluminum mini bread loaf pans
- Knife
- Cutting board
- Parchment paper or silicone mat
- Sheet pan or cookie sheet
Blend Sugar and Butter
Preheat the oven to 350 F/176 C.
In a food processor add the butter and the sugar. And blend until incorporated. If you don't have a food processor you can do this in a bowl with a hand mixer or use a fork.
Flour and Salt
Now add the flour and the salt to the food processor. Pulse and blend until the mixture resembles damp sand.
If you aren't using a food processor, use a fork or pastry blender to blend the flour and salt with the butter/sugar.
This is the base for the homemade Twix bars, which is pretty much shortbread.
Smash and Bake
Spray 5 aluminum mini-bread loaf pans with cooking spray. Or use larger pans with parchment paper. You don't have to use the bread loaf pans. I prefer those because there is less cutting involved. Or if you have silicone candy bar molds you can use those too!
Use a spoon and scoop an equal amount of shortbread crumbs into each pan. Then smash/press it down with the back of the spoon evenly, compacting it down.
Then bake in the oven for 15 to 18 minutes until slightly golden brown on the edges. Don't bake it too long otherwise, it will get ultra crumbly.
Once out of the oven allow them to cool completely. It will take 30 to 40 minutes.
Melt That Caramel
Once the shortbread cookie base has cooled, it is time to melt the caramel. You can use homemade caramel if you like or use something like the Kraft brand individually wrapped caramels.
Place them in a microwave-safe bowl and add the cream. You can use whole milk too. The cream will make it so the caramel doesn't get super hard after melting it and after it sets.
Melt the caramel on high for 30 seconds then stir, repeat, until completely melted and runny. You can also do this with the double-boiler method on the stovetop if you don't want to use a microwave, or don't have one.
Once melted pour an equal amount on top of the shortbread cookie base. I just do 1 tablespoon on each first, then repeat, so it comes out even. If the caramel cools quickly in the bowl, just reheat it, so you can continue pouring it.
Place them in the fridge and allow them to chill for about an hour. The caramel needs to be completely set and chilled before trying to cut it into bars.
Melt the Chocolate
Once the caramel on top has cooled, it is time to melt the chocolate.
You can use whatever chocolate that you want. I like using the Loghouse CandiQuik or Almond Bark style melting chocolate. It just melts super thin and makes dipping a breeze. But! I also will use any number of types of chocolate, like chocolate chips and bars. Which makes it pretty awesome, you can come up with all kinds of flavors of Twix.
TIP: Add 2 to 3 teaspoons of vegetable oil to the chocolate chips or candy bars it will make it thinner/runnier and make dipping easier. You won't need the oil for CandiQuik or Almond bark.
Place the chosen chocolate in a microwave-safe bowl and melt in the microwave on high for 30 seconds, then stir, and repeat until melted and runny.
NOTE: You can also use the double-boiler method on the stovetop if you don't want to use a microwave.
Cut the Large Bar Into Small Bars
Remove one of the bread pans of shortbread, and gently tug on the sides and ends to loosen it. Then remove the large bar and place it cookie side down on a cutting board. DO NOT put it caramel side down on the cutting board. It will wind up sticking!
Then spray a knife lightly with cooking spray or rub it with a bit of oil. Then cut it into 6 bars. (This recipe makes about 30 homemade Twix bars)
Keep the other ones in the fridge. Only do these one at a time. Otherwise, the caramel gets soft and makes it more difficult to cut and dip.
Dip and Set
Now, place a homemade Twix bar in the bowl of melted chocolate and make sure it gets completely covered. Use a fork to dip it, then wiggle or tap it, so the excess chocolate drains off.
Then place it on a sheet pan or cookie sheet lined with parchment paper or a silicone mat. Then proceed with dipping the rest.
Once done, allow the chocolate to set. Depending on the type of chocolate, it may set fairly quickly. The almond bark, CandiQuik, and candy melts, all set fairly quickly at room temp. If using chocolate chips or chocolate bars, you will want to place the homemade Twix bars in the fridge for 15 to 20 minutes so the chocolate can set.
Decorate and Enjoy!
Now they are done. You can make them a bit fancier by melting some white chocolate and placing it in a pastry bag or sandwich bag with the corner snipped, and then drizzle it over the tops of some of them.
Also if you wanted to, after dipping them, and before the chocolate sets, you can add things like chopped nuts, sprinkles, coconut flakes, etc., as well to make even more variations of homemade Twix bars.
Now enjoy! :)
