Fried Method
First I will show you how to do the fried method. Take your tortillas and cut them 4 times, until you make little chip rectangles. So basically cut them in half one way, then half again and then those in half. Place them in a bowl or on a plate, so they are loose.
Fry Them Up
Now we take a skillet or pot and heat up our oil to 325 F. (162 C). I use the medium heat setting on my stove top, it takes around 10 minutes or so to heat up the oil. Once our oil is heated drop in some of the tortilla pieces, don't over crowd them. If you are doing a lot you will need to do batches. The chips don't take long about a minute or so on each side. You will feel them crisp up with your tongs, and they will get golden brown on the edges. Also, the bubbles will subside dramatically when they are ready. (Pro Tip) Let the oil heat back up to temperature in between batches. Using your tongs take them out and let them drain a bit before putting them on a plate lined with paper towel. This is a good time to season them with salt and other seasonings, when they are still warm.
(Pro Tip) The oil can be reused over and over, until it goes bad. So don't throw out the oil after one use, and also make sure the oil has completely cooled down before restoring it.
Baking Method
For the baking method, let's preheat out oven to 275 F. (135). Now take some oil and lightly baste each side of the tortillas. Then like the frying method we wand to cut the tortillas for times to get the little chip size wedges. Add a bit of seasonings like salt, and then place them on a silicone mat or parchment paper lined baking sheet. Bake for 10 minutes, then turn the chips over and bake for another 8 to 10 minutes until they get crunchy.
Differences
Now that both of our chips are done. I really like both of them, I like the fried ones on the left a little more then the baked ones on the right. But, the baked ones are a little bit more healthy, you really can't go wrong with either of them. Season with your favorite seasonings, those popcorn seasonings will work well on these. Serve them up with your favorite salsa, guacamole, cheese dip, garlic dip, or whatever. :) Enjoy!
