Homemade Pumpkin Soup

Ingredients:
* Pumpkin
* Onion
* Sweet Potato
* Carrots
* Salt/Pepper
* Parsley/Chives
Method:
2 cups of Water in a large pot. Bring to the boil.
While you're waiting for the water to boil, dice all your ingredients into medium sized cubes (see picture).
Add diced ingredients to your pot of boiling water and add your salt/pepper and parsley/chives.
Bring to boil again, then reduce to Simmer for approximately 1 hour and 15mins. The cooking time can vary depending on what type of stove top you are using.
You'll know when your vegetables are done when they are soft but still holding their shape.
Turn the heat off. If you want your soup thick then strain some of the watery liquid out of the pot before you blitz it and put it aside (don't throw it out). You put the liquid aside just in case you wish to add some more liquid back into the soup if it's too thick. Use a hand held blender to blitz all the ingredients together while they're still in the pot and you're done.
