Homemade Lemon Cake

Tired of making the same old box cake from the grocery store for every occasion? This is the perfect recipe for you!

Impress your guests with this delicious lemon cake made entirely from scratch. It's simple and adds an extra special touch to every get-together. This age-old recipe was made for everyone's enjoyment; it's not too sugary for those who don't have a sweet tooth, but it can perfectly hit the spot for those who do.

Supplies

Ingredients:

3 cups of all-purpose flour
1 teaspoon of vanilla

4 teaspoons of baking powder

1 teaspoon of salt

1 cup of butter

7 large egg whites

1 1/2 cups of sugar

1/2 cup of sugar

1 1/4 cups of milk

1 lemon or lime

Preheat Oven to 350°F

Gather All of Your Ingredients (Previously Mentioned)

Combine Flour, Baking Powder, and Salt

In one bowl, sift together the flour, baking powder, and salt.

Combine Butter, Sugar, Milk, and Vanilla Extract

In a separate bowl, mix the butter (softened) and 1 1/2 cup of sugar together. After they are fully combined, add the milk and vanilla extract.

Combine Both Mixtures

Add the dry ingredients to the wet ingredients in small increments, continuously mixing together.

Beat Egg Whites

In another bowl, beat the egg whites with 1/2 cup of sugar until the mixture forms stiff peaks (as shown).

Combine

Once the egg white mixture has formed stiff peaks, fold it into the previous batter. Make sure to add 1/3 of the egg white mixture at a time, folding it in gently.

Add Lemon/lime Zest+juice

Once the batter is all fully combined, add in lemon/lime zest and juice to taste, depending on how strong you would like the lemon/lime flavor to be.

Add Batter Into Greased Pan

Grease and lightly flour a 9x13x2 pan, and add all of the batter. (You may also use 3 9-inch round pans.)

Place Cake Into Oven

Once the oven has fully preheated to 350°F, place the cake in and let it bake for approximately 45 minutes.

Finished Cake

After your cake has finished baking, take it out of the oven and let it cool. Once it is about room temperature, sprinkle powdered sugar over top and enjoy.
