Homemade Ice Cream Sandwiches

Hey everyone. Today we are going to make ice cream sandwiches using salted caramel chip cookies. Here is the recipe and I hope you enjoy.

The Ingredients

1/4 cup butter or margarine, softened

1 cup packed brown sugar

1 large egg

2 Tbsp maple syrup

2 tsp vanilla

1 1/2 cups all-purpose flour

1 tsp baking soda

1/4 tsp salt

3/4 cup salted caramel chips

Any ice cream of your choice.

The Butter and Brown Sugar

Preheat the oven to 350'F.

In a large bowl, beat the butter and brown sugar until well combined. The mixture will have the consistency of wet sand.

The Egg, Maple Syrup and Vanilla

Add the egg, maple syrup and vanilla and beat until smooth. Tip: To avoid egg shells getting into your batter, crack your egg into a separate bowl first, then add to your mixture.

Flour, Baking Soda, Salt, and Caramel Chips

Add the flour, baking soda and salt to the butter-sugar mixture and stir until almost combined. Add the caramel chips and stir just until blended.

The Cookie Dough and the Oven

Roll cookie dough into 1 inch balls so that all cookies are about the same size. Place the balls about 2 inches apart on a cookie sheet that has been sprayed with nonstick spray or use a silicone mat. Flatten each ball slightly with your hand. Bake for 12-15 minutes or until pale golden around the cookies but still soft in the middle. Tip: don't over bake them if you want them to be chewy. Transfer to a wire rack to cool.

The Ice Cream

While your cookies cool, grab your ice cream and let it sit to soften. When it is soft enough to scoop, take your cookies and pair them into doubles. Then add a scoop of ice cream to one of the cookies, then squeeze them together. Tip: don't squeeze your cookies too hard or they may break. Optional: If not eating them right away, put them in the freezer so they don't melt. This recipe makes about 10 ice cream sandwiches.
