Homemade Guacamole Panini

Very easy and filling sandwich.

Materials:

2 ripe avocados

1 large tomato ( sliced)

1 cup of fresh chopped cilantro

1 lime

1/2 cup of green onions, chopped

1/3 cup of shredded pepper jack cheese

sourdough bread

sea salt, to taste

black pepper, to taste

Unsalted butter

Step 1: Mashed up the avocados with a fork. ( I left mine a little chunky; but do it to your preference.) Add in the cilantro, the green onions and squeeze in the lime juice. Stir the ingredients together. Add the salt and pepper to taste and set it aside. ( For myself I used the entire lime for my preference.)

Step 2: Preheat your grill pan on medium heat.

Step 3: Next add butter to one side of the bread. Flip it on the other side and start assembling it. Add the cheese, two slices of tomato, a pinch of salt to the tomato, then add the guacamole mixture, add more cheese and then top it with the bread. ( Make sure the butter side bread is on top.

Step 4: Place the sandwiches on the grill and add a little pressure with your spatula on the sandwich. ( I used a grill press) Watch the bread and flip it over when its golden brown and flip and cook on the other side. To know when it's done when you see the cheese is nicely melted on both sides. Cut and end enjoy.

* This sandwich is very yummy and very filling.
