-Combine the warm water, active yeast, honey, and salt in a medium mixing bowl

-Allow this mixture to sit for five minutes, until it looks like beer foam

-Combine the oat flour and 1 to 1 gluten free flour in a mixing bowl, then combine that and the butter in the yeast mixture

-Knead the dough for about five minutes, until the bowl is smooth

-Cover the dough with a towel and leave in a warm spot for 1 hour

Boiling the Dough

-Preheat the oven to 450 degrees Fahrenheit

-Combine the four cups of water and the baking soda in a pot, then bring the mixture to a boil

-Divide the dough into sixteen equal pieces, and roll them out into sticks 10-12" long. Note: as the dough is gluten free, it is easily breakable. Be sure to knead the dough if it breaks, and just put it back togehter

-Put however many pretzels will fit into your boiling mixture into the pot, and allow them to sit for thirty seconds
