Homemade Fizzy Pop Rocks Candy!!!

I love Pop Rocks!
So a homemade variety sounded great!
This recipe makes a tart and fizzy treat...not the same as the store bought stuff...
but really fun to make with the kids!

Gather the Supplies!

Here's what you'll need:
(makes quite a bit...might just want to 1/2 it)
2 cups sugar
1/2 cup light corn syrup
1/4 cup water
1 teaspoon flavoring extract, flavor of your choice
3-4 drops food coloring, color of your choice
1/4 cup citric acid
1 teaspoon baking soda
1 additional teaspoon of citric acid
Pinch of cornstarch, for dusting...
Lightly dust baking sheet with cornstarch.

In a saucepan, combine the sugar, corn syrup, and water.
Cook the mixture until it reaches 300 degrees (hard crack)

Add the Fun, Flavor and Fizz!!!

Remove from heat
add the baking soda

extract (we used one dram of strawberry)

(we only did 2 drops and it pastels the
color so I'd go with 3-4 drops)

Mix and Pour...

Cool completely, about 30 minutes.
Break the candy into pieces.
I just used a butter knife...
You can break it up into small pieces,
then put some in a plastic bag and hammer them
into little pebble pieces!
Store in Ziploc bags.

The candy is filled with holes from the baking soda!
This is supposed to be the magic coupled with
citric acid to get that pop effect!
They are really crystally and cool looking!

That are sweet and explode in your mouth...
It was sort of fizzy and sometimes bubbly in
your mouth...but slightly sour!
Not too sour for me or my daughter...
(who's nick-name involves the word 'lemons'...because she loves lemons)
Was it fun to make and eat?
YES! And it's super fun to watch them eat it!
