Homemade Chicken Broth

l love making this chicken broth. It has so much flavor to it. I usually debone the chicken and make Spicy Chicken Tacos, the Poached Chicken with Pomegranate Orzo, or Chicken Salad. This recipe can also be found at gardengirlrecipes.com.

Ingredients:

4-5 pound whole chicken or parts, skinless

1 onion, chopped

2-3 cloves garlic, halved

2 carrots, chopped

2 celery stalks, chopped

1 leek, chopped

1 tsp salt

1 tsp peppercorn

2 bay leaves

a few fresh dill sprigs

a few fresh parsley sprigs

a few fresh cilantro sprigs

12 cups water

Place Chicken in Large Pot

Place the skinless chicken in a large pot.

Add Remaining Ingredients

Add the remaining ingredients except the water.

Add Water

Add the water, cover, and bring to a boil.

Simmer

Reduce the heat and simmer for about 2 hours over low heat.

Remove Chicken

Carefully remove the chicken from the broth and set aside. Debone the chicken and use as desired.

Strain Broth

Strain the broth through a sieve and discard the solids.

Remove Fat

Pour broth into a gravy strainer to remove any excess fat. If you dont have a gravy strainer, just place the broth inside the fridge and let the fat solidify on top. Then you can carefully remove with a skimmer.
