Homemade Chewy Caramel Candy, the Perfect Gift

I have always wanted to make Caramel candy at home but all the recipes need a sweetened condensed milk. I found a recipe to make caramel candy with heavy cream instead and butter. I tried it out and it turned out tasting exactly the same as the store bought caramel candy and even better. This is a great gift to give to someone this holiday season and will adore. You could make these candies as a gift or keep them all for yourself. You will not be disappointed. This version of Caramell candy holds its shape but is still soft and chewy on the inside. Could also pop the caramels with sea salt to add little more flavor to them and enhance the sweetness of the candy.

Line a pan with wax paper and secure with clothes pins
Measure out all of your ingredients
Grab a medium pot and pour 1 cup of heavy cream into it
Next add in the 1/4 cup of butter
Also add in a teaspoon of salt
Heat the pot on medium until the butter is melted
When the butter is melted turn off the heat and set it aside
Grab your large pot and pour in the corn syrup and the water
Next carefully add in your white sugar being careful not to get any granules on the side of the pot
Mix that ingredients until you get a consistency of wet sand
Turn the heat on to medium and place in your candy thermometer
Attached your thermometer on to the side of the pot
Let the sugar melt while not stirring
Sugar will start to melt on the sides of the pot
Heat the sugar until it reaches 300°F
Do not stir the sugar and it will be very hot
After does sugar has reached 300°F add in the cream and butter mixture carefully all at once stirring
The sugar will foam up
Add in your vanilla extract and continue mixing
If not all the sugar has dissolved place the mixture on the heat and heat it until it bubbles up
Next pour your caramel mixture into the pan lined with waxed paper
At this time you can add the sea salt on top of the caramel
Wait about 3 hours until it is cool
It is ready to cut, cut it into squares and wrap with wax paper for a gift

This candy was very easy and quick to make at home. It was very inexpensive and did not need a lot of skill to make. I enjoyed making this candy and will give it to someone as a gift. I hope that you will give this candy as a gift to someone for Christmas. Happy holidays!
