Homemade Cheese Balls Dessert

Do you love Cheese? Have you ever homemade cheese? Today I will try teaching how to make these soft & spongy cheese balls in sugar syrup. Yummy.... is certainly the cutest reaction when the ball rolls on in your mouth. Let's get started.

Supplies

1. 6 cups of milk

2. 5 cups regular drinking water

3. 1 cup sugar

4. Citric acid (5-10 gms only)

5. 3 pods of Cardamom

How to Make the Cheese?

In this step, I first boiled the milk at a slow pace. I made sure to keep a close watch when the milk is at the exact junction to be boiled completely. As seen in pics 2 & 3 the cream starts forming on the top and this will form a thick layer. As soon as the milk is boiled, I added citric acid to this. Immediately the milk starts curdling. Slow the water will get separated as shown in pic 1. At this stage, I let the entire process complete when the milk has been entirely curdled. Then, I let it sit there for 5-10 minutes to cool down a little.

Preparing the Cheese

In this stage, I poured all the curdled milk into a bowl with a cheese cloth and let the water drain out as seen in pic 2. Later, I tied this onto the kitchen sink tap as seen in pic 1, and let the water drip off for the next 2 hours. This drains off all the water and only the cheese remains.

Kneading the Cheese

Dry cheese from the previous step is moved into a glass bowl as shown in pic 1. This is the most crucial step. In this step, using the end of my palm I kneaded the cheese. I continued doing this for 10-12 minutes and made it a very soft lump.

Making the Balls

In this step, the test to confirm if the cheese has been kneaded to its soft texture is by rolling small balls. If the balls have cracks, it is an indication that more kneading and softness are still required. The balls were perfect. No cracks or breaks. The texture may be a little rough but there certainly should not be any cracks at all. See images 3 & 4. All 10 balls were made as seen in pic 1.

Getting the Sugar Syrup Ready

In this stage, I took a pan and added 3 cups of water. Then added 3 pods of cardamom. Boiled the water and then added sugar into it and let it boil for 3-4 minutes. The sugar syrup is ready.

Adding the Cheese Balls

Carefully one by one, I added these balls into the sugar syrup. Let it boil as I covered the lid for 18-20 minutes. Checked to see if it looks good. The balls grew and enlarged. After 21 minutes, I turned off the gas stove. I let it cool and poured it into a glass container. Kept it in the fridge for 2-3 hours and served it chill. It was 'Yummy' the cheese balls are soft, spongy and delicious :-)
