Homemade Biscuits in a Jar
I know that homemade breads have many benefits, both health and budget wise, but the long process of making biscuits is sure an inconvenient way to start a morning. In the past l had to either wake up earlier or serve breakfast later if it meant biscuits. So l did a bit of brainstorming and came up with Biscuits In A Can, a quick and easy way to get hot flaky biscuits on the breakfast table.
Mix
In a food processor pulse together
4 cups all purpose flour
2 tablespoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
Bit by bit add and pulse
2/3 cup oil
(l most highly recommend lard, palm oil, coconut oil or butter. Oils that are liquid such as canola, soybean etc. typically do not do biscuits justice.)
Stop when mixture looks like a coarse meal.

Can It.
This mixture should all fit in a single one quart jar. Unless you have small hands using a widemouth is best for packing it in. Once snugly in screw a lid on, label it and store it away until the morning that hot fresh biscuits are on the menu. Unless you used butter or lard it should last indefinitely in the fridge and even if you did it will still last a good long time.
That Morning...
The morning that biscuits are needed preheat your oven to 450 degrees fahrenheit then take jar of mixture from fridge. Break up contents with a fork or knife then either dump into food processor and pulse until all the big chunks are gone or pour into bowl and break up with your fingers.
Once it all looks like coarse meal again GENTLY mix in 1 1/2 cups of buttermilk. Do not over mix or your biscuits will come out hard and dry, more like big crackers.

Roll Out
Roll out dough and cut biscuits out with a biscuit cutter or widemouth jar band. Depending on how thick you roll it out you should get 12-18 biscuits. Place on greased pan and as an optional step use a pastry brush to coat with melted butter.
Bake
Bake at 450 for 15 minutes.
I typically have two or three jars ready in my fridge for easy biscuits. Sometimes l will play around with it adding a cup of sugar, cinnamon, nuts, berries etc and cut them into triangles to make scones. Let me know if you try any alterations.
