Homemade Balushahi (Great Indian Doughnuts)
Balushahi is a traditional sweet from India. Also called as Indian Doughnut, but it is lot different from a doughnut. It has a very good crispy texture.
It can be found in all sweet shops in India. It is very easy to make and doesn't require much ingredients. Also it can be stored in an air tight container for 5-6 days.
Ingredients
- Maida Flour- 250 gm
- Clarified Butter (Ghee)- 50 gm
- Curd- 50 gm
- Sugar- 200 gm
- Walter- 200 ml
- Salt
- Oil (For Frying)
Making the Dough
Add Salt, Ghee, Curd and water in Maida.
Blend it well and make a dough. And keep it aside for 30 minutes for setting.
Making Sugar Syrup
Add 200 gm sugar in 200 ml water in a vessel.
Boil it on low flame until the sugar dissolves in water completely, stir it in meanwhile. Now add cardamom powder for flavour. After some time check the sugar syrup by dropping a little drop on your finger, stick it between fingers and see, whether it forms a single thread or not. When it ready turn off the heat, cover it and keep it aside.
Making the Balushahis
Break the big dough into small dough balls, flatten them a bit. Make it round in shape.
And make a small hole in the middle of those balls using your finger. Make all of them like this.
Frying
Take some oil in a wok. Keep the flame low. Let the oil heat up, it should not be very hot.
Put 2-3 balushahis in it. Let them fry till they turn brownish from both sides, also flip them time to time. When they start floating over the oil, take them out. While taking out, hold them for some time to drain out the extra oil. After taking out, dip them in the sugar syrup. Fry all other balushahis like this. Take out the balushahis after they are well soaked in sugar. Soak all other balushahis likewise.
Serve
After they get cold, they are ready to be served or stored.
