Home-made Pasta

Looking to make healthy, Italian styled pasta? Well if you are, you've come to the right place. Here I am showing you how to make home-made pasta. This pasta isn't like your average store bought noodles, these noodles don't weigh on your stomach and make you feel like you have to unbutton your pants. This isn't even half of why it is so delicious, you have to try it to see!

Supplies

Pasta:

400g of flour, preferably non processed flour

5g of olive oil

7 eggs

A kitchen aid mixer

A dough hook for the mixer

Kitchen Aid Pasta Making Attachments

Noodle drying rack

Sauce:

Garlic

Butter (one stick)

1 quart of heavy wiping cream

Pepper

Salt

Flour (one ounce I think)

Parmesan cheese (3 ounces)

Preparing Your Garlic

Lets get started! In order to prepare for the sauce we are going to need to get our garlic ready. The first thing you are going to need to peel your garlic. Put the cloves of garlic into a small oven safe dish, with one stick of butter. Bake on 400F for 40 minutes.

The Flour

Now to get started on the noodles! You will need to measure out 400g of flour in a mixing bowl.

Olive Oil

After you add the flour, you will need to add 5g of olive oil into the same bowl as the flour. The brand of the olive oil doesn't matter.

Cracking Eggs

Now these next few steps are challenging. You will then need to get seven eggs and two bowls. You will need to crack two eggs into one bowl. The other five eggs you will need to separate your egg white and egg yolk. Put the other five egg yolks in the same bowl as the other two eggs, and put the egg white in another bowl.

Egg Yolks

Once you have separated the egg white and yolk, you will start mixing your flour and oil. Put your mixer on the slowest setting. Then, you will take the bowl with the egg yolks in it, and you will add one egg yolk. Once you add your egg yolk you will take a spatula and mix the flour along the edge of the bowl into the middle. Once the egg yolk gets mixed in completely, add another egg yolk. Make sure your mixing the flour wards towards the mixer to make sure all of the flour is getting mixed in with the eggs. You will repeat these steps until all of the egg yolks have been mixed in completely.

Egg Whites

This is the part where you have to be very careful. Once all the egg yolks are mixed in you will take the bowl of egg whites. Make sure your mixer is still on the lowest setting, and you will slowly add a tiny bit of egg whites until little nuggets start to form. Make sure your mixing the the flour inwards with a spatula during this.

Little Nuggets

Once you have added your egg whites this is what the dough should look like. Once it looks like this, turn off your mixer. If it doesn't look quite like this you will either need to add more egg whites for more moisture, or you added to many egg whites. If you added to many it is ok, but your pasta will be very sticky.

Kneed the Dough

Once you have turned off your mixer, you are going to want to start to kneed the dough into a ball. It is ok if it has cracks or crumbs in it. After the dough is in a ball, you are going to wrap it up in serain wrap and put it to the side.

Boiling the Garlic

Put the garlic that was in the oven, and place it into a pot. Your going to smash the garlic up, and then set the stove to high until it starts to boil.

Add the Flour

Once your garlic starts to boil your are going to turn the stove off, add one once of flour and turn the stove on high while constantly mixing it with a whisk.

Adding the Heavy Wiping Cream

Now we are going to add one quart of heavy wiping cream. Make sure your constantly mixing so the cream doesn't go bad. Once the sauce starts to rise, your going to turn the stove off again.

Pepper and Salt

Now your are going to add pepper and salt. When adding these there is no measurement. Add more based off of taste.

The Cheese

Now for the Cheese. Add 3 ounces of cheese to the sauce. Keep adding cheese, salt, and pepper until the sauce taste how you want it too. Then your done with the sauce! Keep the stove on low until you are ready to eat it.

Starting the Noodle Making Process

Once your done with the sauce, you are going to pull out the dough again. You are going to need to put some flour down on a flat surface. You are then going to roll the dough out, flat and even. Then, after the dough is rolled out you are going to need to attach the Kitchen Aid Pasta Making Attachments to your mixer. Make sure you are using the stretching one and not the cutting one.

Stretching the Dough:

Once you have it attached to your mixer to your attachment you are going run the dough through it. Make sure to start at zero. Zero is not listed on the attachment, but it you just need to turn the nob about a quarter inch after one. Keep running the dough through the attachment, but go up a number each time. Once you get to three stop.

Stretching the Dough Part Two:

Once you have reached three, go back to zero, and work your way up to six. Warning it will be long and you will want another set of hands!

Cutting the Dough:

Once you have streached your dough all the way, you will then cut it into 8-10 inch sections. Once you have cut the dough up, cut of the corners on one end of the dough.

Getting Ready to Cut:

Now you will then need to switch out your attachment from the stretching attachment to the noodle cuter attachment. Make sure you have a drying rack or something ready to hold your noodles.

Cutting the Noodles:

You will then take one piece/ section of dough and you will need to run the dough through the attachment. Once you dough has been cut into noodles, you will then set them on the drying rack.

Let the Noodles Dry:

Keep the noodles on the drying rack for about 5-10 minutes. Make sure they are spread out and not in clumps.

Boiling the Noodles

Once your ready to boil your noodles you will need to get a pot of water and the stove to high. Once the water is boiling, you can add the noodles. The noodles will only need about 4-7 minutes until they are ready, but you should still check them, and boil to your liking.
