Holiday Hug Sandwich Cookies

These Christmas cozy cookies and like little bites of holiday magic-soft, sweet and sprinkled with festive joy. Each one is decorated to bring a smile, capturing the warm, nostalgic feeling of Christmas mornings, They're not just cookies...they're Christmas happiness wrapped in sugar.

Supplies

For the cookies :

2 boxes devils food chocolate cake mix

1 cup butter softened

4 eggs

3 Tablespoons all purpose flour


For the filling:

12 ounces of cream cheese softened

1/2 cup butter softened

4 cups powdered sugar

1 teaspoon vanilla

Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper or silicone baking mats. Using an electric mixer, beat together the ingredients for the cookies until well combined.

Roll into balls and place 2 inches apart on the prepared baking sheets.

bake for 8-10 minutes, or until cookies are cracked on the top. Do not overbake. Remove cookies to wire racks and cool completely.

Meanwhile prepare the filling by beating the cream cheese and butter with an electric mixer until smooth. Gradually mix in powdered sugar, beating until light and fluffy. Stir in Vanilla.

Spread about a tablespoon of filling on the flat side of one cookie. Top with a second cookie and press down until the filling reaches the edges of the cookie.

Add a little powdered sugar to the top of each cookie with a small sifter, get creative with your decorating.
