Holed Summer Fun Salad Lunch

Eating tortilla as "plate" instead of as wrap for a long time and not knowing what to do with my cannoli forms made me coming out of a holed summer fun salad lunch.
In this Instructable, I'll show you how to make it. If you have extremely picky little eaters, this is a guaranteed chance to see your children steal the food before they're ready.

INGREDIENTS

Any flour tortilla, one or two per person

Extra virgin olive oil, for coating tortillas if you grill or bake it

Oil for deep frying

Vegetables, fruits, chicken, cheese, vinegarette salad dressing etc. for the salad

EQUIPMENT

Cannoli forms

5-in-1 griddler

Fryer

Follow the following two easy steps. There is no hard work, just fun in this project.

Make Holed Tortilla Plates and Discs

Brush both sides of tortillas with extra virgin olive oil.

Stack them on a cutting board and make holes using one end of a cannoli form (the stainless steel ones I have are quite sharp on the ends).

Use a chopstick to push the discs out of the cannoli form.

Separate the discs into individual ones if they stick together.

Cook Holed Tortilla Plates and Discs

For the discs, you can grill, bake or fry them.

For the holed tortilla plates, you can grill or bake them.

To grill, lay the discs or tortillas in a single layer on the griddler, it may take several minutes to grill one batach and you may need to flip them in the middle because tortillas are thin, only the bottom plate of the griddler is in contact with the tortilla.

To fry discs, preheat the fryer to 355-375F, fry them for 1-2 minutes or until the color of the discs become darker. be very careful, they easily become burnt.

To bake, preheat oven to 350F, lay the discs or tortillas in a single layer on cookie sheets, bake for 6-8 minutes. Depends on the size of your oven, one good thing about baking them is you may be able to bake 4 sheets in one batch.

Set aside the cooked tortillas to cool. Once cooled, they are super crispy and crunchy.

Serve

If your children haven't stolen and eaten all the tortillas yet, toss the discs in salad, place your salad on holed or non-holed cooked tortilla plate. Enjoy!

My children don't eat soft tortilla. Once I start to hole them, they are like pirates, try to steal and devour the holed tortillas before they're cooked. I have also tried to serve the tortilla plate standing on my face to make them laugh hilariously. A laughing day is a fun day.
