Hoisin Braised Baby Choy and Shiitake Mushrooms Recipe

Slow cooking over low heat allows the flavors of the sauce to permeate the bok choy and shiitakes, resulting in a satisfying and flavorful dish that is delicious over rice.
 
Ingredients

3 tablespoons hoisin sauce
1 tablespoon tamari or other soy sauce
1 tablespoon sake
1 tablespoon water
1 tablespoon peanut oil
2 tried chilies
1 teaspoon peeled and minced fresh ginger
1 teaspoon minced garlic
4 small baby bok choy, trimmed and halved lengthwise
4 ounces fresh shiitake mushrooms, stems removed and caps thinly sliced
2 tablespoons thinly sliced scallions

Instructions

Step 1: In a small bowl, combine the hoisin, tamari, sake, and water and set aside.

Step 2: Heat the peanut oil in a wok or large skillet over medium-high heat. When the oil is hot, add the chilies and stir-fry for about 30 seconds  Discard the chilies. Add the ginger and garlic and stir-fry for about 30 seconds  Add the bok choy, mushrooms, scallions, and sauce and stiry-fry to coat the vegetables, 2 to 3 minutes.

Step 3: Reduce the heat to low, cover, and simmer until the vegetables are tender, about 15 minutes. Serve hot.
