Herb Pesto

"When life gives you herbs, make pesto."

Pesto sauces do not have to be made solely from basil. You can use almost any herb to make pesto. Pesto comes from the Genoese word pesta, which means to pound or crush.

I recently went on an adventure around my college campus and discovered a whole bunch of herbs that I used to make a pesto.

Herbs

 A handful each of Basil, Chives, Thyme, and Oregano.

Almonds

1/2 cup of toasted almonds. 

Cheddar Cheese

1/2 cup of cubed sharp cheddar cheese

Garlic

3-4 cloves of fresh garlic

Blend

Blend the herbs, almonds, and cheddar in a food processor with a generous amount of olive oil, a pinch of salt and pepper. 

Tomatoes

Sauté 2 cups of halved cherry tomatoes with olive oil, salt, and pepper 

Pasta

Add the pesto to pasta with the sautéed tomatoes. 

Caprese
