Hedgehog Rolls

Here are the directions to make baked hedgehog rolls.

The first step is to make bread dough.  Here is the recipe I use for a medium sized loaf:

1 1/2 tsp.    yeast
1/2 cup       Whole Wheat Flour
2 1/2 cups  White flour
1 tsp            salt
2 tbs.           sugar
1                   egg
3 Tbs.          butter
3/4 to 1 cup  water

I use a machine set on manual, but you can make the dough however you would like.


Form Rolls

When the dough is finished except for the last rising, I remove it from the machine and cut it into quarters. Then I cut the quarters into thirds, this makes 12 rolls. You can make them smaller or larger.
Next I spray the pan.
Then I form the rolls into balls and put them on the cookie sheet. I make the rolls nicely round by pulling down on the sides of the dough and pushing the bottom up.

Add Eyes and Noses

The eyes and noses come next.  I quarter the raisins for eyes.

I pinch the nose with fingers dipped in water to make them a little sticky, then I stick the eyes on by pinching fairly hard. If you don't embed the eyes enough they will fall out when the rolls are baked.

Add Spines and Bake

I cut the spines with a pair of scissors. I use one hand to steady the scissors and the other to cut.

I let them rise for another 15 minutes or so, then put them in the oven at 350 for a half hour.

There is nothing like cute bread. The kids have even been known to eat the raisins.
