Cheeseburger Chowder


What's not to love about a soup that tastes like a burger? Particularly if it is served with sliced dill pickle and a nice hot sauce? This cheeseburger chowder is a real hit with kids of all ages.
Ingredients:
- 1 pound ground beef
- 1/2 cup chopped onion
- 2 cups cubed red potatoes (about 2 cups)
- 2 cups water
- 1 sliced celery stalk
- 4 beef bouillon cubes
- 3 tablespoons all-purpose flour
- 2-1/2 cups whole milk
- 1 1/2 cups shredded cheddar cheese
Equipment:
- A 3.5 quart heavy dutch oven

Brown Some Stuff



In the dutch oven, brown beef, onion, and celery over medium heat until onion and celery are soft and meat is thoroughly browned (about 7 minutes). Drain. Since the ground beef we use is very lean (we grind it ourselves), we simply use a paper towel to soak up any grease in the bottom of the pot.
Potato Time




Add the potatoes, water, and bouillon to the pot. Bring to a boil then reduce to a simmer and cover until the potatoes are soft, about 20 minutes.
Thicken




In a small measuring cup, mix the flour and 1/2 cup milk until smooth. Add this to the pot and stir. Cook at a boil and stir 1-2 minutes or until thickened.
Milk Time



Stir in the remaining milk and allow to heat until bubbling.
Cheese Time!



Add the cheese and stir until melted. Serve and enjoy!
